Pastitsada

 

 

A local Corfiot dish for special days such as national holidays and family celebrations. No one in the family can resist to this mouthwatering dish of beef in tomato sauce! 

 

The original recipe is much more spicy , but my own version of  ‘pastitsada’ caters to everybody , young and old, without missing its real flavour and unique taste.  Try it!

 

 

Serves:                  4

Preparation time:  10 minutes

Cooking time:       50 minutes in a steam cooker ( You can cook it in an ordinary pan but it will probably take longer)

 

 

Ingredients

 

1 kilo of lean beef

 

½  a  cup of  olive oil

 

2 onions chopped finely

 

2 cloves of garlic

 

Salt and ground black pepper

 

1 stick of cinnamon

 

½ a cup of red dry wine

 

2 ripe tomatoes chopped

 

1 cup of tomato paste

 

½ a kilo spaghetti

 

Ground parmesan cheese

 

 

 

 

·        First, pour into a pan the olive oil and bring to boil .

 

·        Next cut the beef into wide strips and place it into the pan.  Add the chopped onions and garlic , salt and pepper and simmer for a few minutes until golden.

 

·        Add the wine , then the cinnamon , the chopped tomatoes , and tomato paste diluted in a cup of water.  Mix.  Add 1-2 cups of water as appropriate (to cover the beef )and stir.

 

·        Cover and cook for 50 minutes in a steam cooker ( or longer in an ordinary pan ,until the meat is tender) . 

 

·        When ready , take off the lid and cook for a few more minutes until the sauce is thick enough.

 

·        Serve on boiled and drained spaghetti and sprinkle with cheese.

Bourtheto

 

A local fish dish that is quick and tasty.  Since Corfu market has got fresh fish on a daily basis, Corfiots buy a lot of fish.  Also, there are national holidays when it is traditional to eat fish , such as the 25th of March.  The following recipe is best done with special kinds of fish, usually fresh, but frozen fish is also very good  and tasty.

 

Ingredients

 

Best type of fish: cod fish in slices or mackerel.

 

1 cup olive oil

1 cup water

Salt

1 lemon (juice)

Black pepper

1 tablespoon  sweet red pepper

1-2 onions chopped

 

There are only 2 things to do:

 

  1. Prepare the sauce and
  2. cook the fish.  It all takes 10-15 minutes.

 

The Sauce:

 

Mix :  olive oil, water, salt , pepper and onions,  and  boil for a couple of minutes.

 

The fish:

 

Add the fish and the lemon juice.  Cook for 7-10 minutes and serve hot.

 

It goes well  with brown wholemeal bread.  You can replace lemon juice with red wine, and even add some tomato paste for a thicker sauce.  It all depends on your  taste.

Cheesepie

 

A family favourite that kids will love.  It is a filling snack for any time of the day and can be preserved in the fridge for 2-3 days.  You can eat it hot or cold , along with a green salad or alone.  You can make up your own version of cheesepie using any leftover cheese ,milk or yoghurt.  My own recipe includes feta cheese which is not only our national product but it also adds a distinctive flavour to the pie.  Also, the ingredients are easy to find as this version of cheesepie does not require a ‘fillo’. Thus it can be made in minutes.  It is a quick filling dish for busy people.

 

Note:

I always use a pyrex baking dish so as to check easily if the cake is properly baked.  I use a fork to prepare the mixture.

 

Ingredients

 

Some olive oil for greasing the baking dish

2 cups of plain white flour (if you use self raising flour it will be more fluffy)

1 cup of milk

3-4 eggs

Salt

250 grams feta cheese in crumbs

1 yoghurt

Black pepper

Toast crumbs

Ground cheese (any hard cheese will do , but the saltier the better)

 

Beat the eggs lightly with the salt , add the milk and feta cheese, then the flour, yoghurt and pepper.  Pour it into the baking dish which is previously  greased and sprinkled with some flour.  Sprinkle on top ground cheese and toast crumbs.  Bake in the oven for about 40 minutes or until golden.  Serve it hot or cold.

 

 

Quick Oat cake

-----------------------------

 

2       cups Quaker oats

1       cup flour

Some salt

2       cups of Milk

2-3   spoonfuls of sugar

1/2   cup olive oil

1/2   cup sultanas

1     Orange(juice)

Vanilla flavour

Dark chocolate bits

 

------------------------------

 

Mix all , add more flour if dough is runny and bake for about 45 mins.

The Egg-free cake

 

A light cake for those who avoid eggs and butter.

 

Ingredients

 

¾ -1 cup sugar

½ cup olive oil

1 low fat yoghurt

1 cup semolina (fine)

1-2 cups self-raising flour

1 vanilla essence

11/2  teaspoon baking powder

1 orange(juice)

¼ cup brandy

½  cup sultanas soaked in water

½ cup chopped walnuts

Some olive oil to grease the tin

Mix well sugar and olive oil.

Add yoghurt and semolina . 

Add some of the flour and the rest of the ingredients till the mixture is smooth and thick.

Pour into a baking dish previously greased with olive oil.

Bake at 150C for about 45 minutes or until golden.

Corn cake

 

An easy recipe for all.

 

Ingredients

 

2 cups corn flour

2 cups plain flour

1 cup olive oil

1 cup orange juice

1 cup raisins

1/2 teaspoonful cinnamon

1/2 teaspoonful clove(ground)

1 teaspoonful baking soda

1/2 cup brandy

2 spoonfuls (soup) sugar

lemon-grounded rind only

warm water

salt

 

----------

 

Mix corn flour with 1-2 cups warm water.

Add a pinch of salt.

Add water till the mixture is firm, like a cream.

Add:

olive oil, orange juice, plain flour, spices and add soda diluted in brandy.

Add sugar and raisins.

Finally, add grounded lemon rind.

 

Bake for about 45 minutes-or until golden- at 150 C.
